1) Take half KG clean Paya, Cleaning paya is very difficult task so you can buy already cleaned paya from store.
2) We should add enough water that could cook the garlic and onion, The other way is to add enough water in which payas dipped properly.
3) Add two onions and garlic ( I have added two full pieces of garlic)
4) Add spice mixture which is also called whole garam masala. Whole garam masala is used to diminish the paya smell, we would take them out late.
5) Pressure cocking for 6-7 minutes.
6) Strain the water (yakhni) separate, Yakhni will help us in rest of cooking process.
7) Now take out the spices
8) Add oil to the pane and paya without spices
9) Add red chilli , salt and turmeric powder. You can increase/decrease quantity according to your taste.
10) Cook everything for 2 minutes. On this point make sure payas don’t stick with pane, you can add more oil if needed.
11) Add Paya masla powder and green chilli (Again how much you want)
12) Cook everything few minute and add left over yekhani if needed, Make sure you don’t dry your paya.
13) Add tomato (I have used frozen tomatoes, You can use peeled off fresh tomato as well)
14) Cook few minutes and then add left over yakhni and water (Five glasses overall).
15) Put pressure on for 20-30 minutes, if your payas are too big you can increase the time accordingly.
16) Garnish with coriander
17) Ready to eat, Serve with white boiled rice
